We’re hosting our families for Easter brunch this weekend. I thought you might be planning your menu, too. Skim this recipe roundup for plenty of Easter brunch ideas. I limited each category to my top five suggestions to help you narrow your selections.

Green Goddess Hummus
This delicious green hummus recipe is flavored with fresh herbs! Use classic green goddess dressing herbs like me or change it up with other fresh, leafy herbs. (You’ll want to use 1 cup or less fresh herbs, to taste.) Recipe yields about 1 3/4 cup hummus.
Baked Goat Cheese
This creamy, honey-swirled baked goat cheese recipe is easy to make at a moment’s notice! Recipe yields a scant 2 cups, enough for 4 to 6 appetizer servings.
Avocado Toast (Plus Tips & Variations)
Avocado toast is creamy, crisp and so satisfying. It’s a delicious and simple breakfast, snack or light meal! It’s best consumed immediately, since the avocado browns over time. Recipe as written yields 1 slice of basic avocado toast; multiply as necessary.
Torn Olives with Almonds, Celery & Parmesan
This fun Mediterranean appetizer features briny green olives, crumbled Parmesan, crisp celery, and toasted almonds. Recipe yields about 2 cups, enough to serve 4 to 6.

Healthy Blueberry Muffins
These healthy blueberry muffins are golden, fluffy, moist and delicious! No one will guess this recipe is made with 100% whole wheat flour and naturally sweetened with honey or maple syrup. Recipe yields 12 muffins.
Banana Coconut Muffins
These naturally sweetened banana coconut muffins taste like a tropical treat. They’re so tender and flavorful, I bet you can’t tell they’re made with 100% whole wheat flour! Recipe yields 1 dozen muffins.
Healthy Carrot Muffins
Healthy carrot muffins made with whole wheat flour, coconut oil and maple syrup! They taste fantastic, too, of course. These muffins make a great, quick breakfast! Recipe yields 12 muffins.
Lemon Raspberry Muffins
These delicious raspberry muffins are moist and fluffy. They’re healthier than most, too, since they are made from whole wheat flour and naturally sweetened with honey. Recipe yields 1 dozen muffins.

These carrot cake pancakes are decadent and delicious. Make them with whole wheat flour or all-purpose if you prefer. Recipe yields 11 to 12 medium pancakes.
Whole Wheat Banana Pancakes
These banana pancakes are so fluffy, no one will guess they’re made with whole wheat flour! Top these whole wheat pancakes with peanut butter and sliced bananas for extra protein and fiber. Recipe yields 6 to 7 pancakes (enough for 2 to 3 people); double the amounts for a family or more leftovers.
Crêpes
Learn how to make crêpes at home with this foolproof crêpe recipe! Crêpes are easier to make than you might think. This versatile recipe works with several kinds of flour: all-purpose flour, whole wheat flour or buckwheat flour. Make them sweeter by using the full amount of sugar, or keep them more savory on the lower end. Recipe yields 8 crêpes.
Almond Flour Pancakes
These almond flour pancakes are tender, hearty and delicious. Plus, they’re gluten-free and lower in carbohydrates than most. The recipe yields about 12 pancakes (it can be easily halved, but extra pancakes freeze well, so I suggest making the full batch).Â

This stuffed shells recipe features cheesy, saucy shells stuffed with a delicious spinach and ricotta filling. Make these stuffed shells for dinner tonight! Recipe yields about 28 shells, about 8 servings.
Easy Brown Rice Risotto with Mushrooms and Fresh Oregano
Creamy, delicious, healthier baked brown rice risotto with minimal stirring required! This recipe is designed for brown arborio/short grain brown rice so any grain substitutions will affect baking time. (White arborio rice will only need to be baked for 40 to 45 minutes.) Look for brown arborio/short-grain brown rice at well-stocked grocery stores or health food stores. Skip the wine if you don’t drink, but it adds a lovely depth of flavor. Recipe yields 4 to 6 servings.
Spring Pasta with Peas and Asparagus
This very green pasta dish is bursting with spring flavors, including peas, asparagus and fresh herbs. Once you have prepped your vegetables, the dish comes together rather quickly. This recipe yields a lot (enough for 6 to 8 servings) so feel free to halve it if you are serving two.

Freshen things up with a salad. Here are a few of my favorites:
Roasted Beet Salad with Goat Cheese & Pistachios
This classic roasted beet salad recipe is like my favorite French restaurants’ beet salads! This salad features goat cheese, pistachios and arugula with a zippy Dijon dressing. Recipe yields 4 to 6 side servings.
French Carrot Salad
This French carrot salad recipe is simple and fresh! You’ll need carrots, olive oil, lemon, honey, cumin, parsley and chives. Chickpeas are optional but recommended. Recipe yields 4 servings.
Lemony Lentil and Chickpea Salad with Radish and Herbs
A fresh and filling bean salad flavored with lemon and fresh mint and dill. Use steamed lentils and canned chickpeas for a meal ready in under 20 minutes. This salad keeps well for a few days in the fridge and packs great for lunch! Recipe yields about 5 1/2 cups (4 to 6 servings).
Green Goddess Tortellini Salad

Coconut Macaroons
These coconut macaroons are the perfect sweet treat. They’re gluten free and subtly flavored with honey or maple syrup. Dip them in chocolate if you wish (I recommend it)! Recipe yields nearly 3 dozen small cookies (34 cookies, by my count).
Monster Cookies
Truly the best monster cookie recipe! These peanut butter, oatmeal and chocolate chip cookies are perfectly crisp on the outside and tender on the inside. Recipe yields 18 cookies.
Chocolate Peppermint Cups
Delicious honey-sweetened chocolate peppermint cups! These dark chocolate treats are fun and easy to make. Recipe yields 12 to 15 mini peppermint cups; multiply if necessary (you’ll need that many mini cupcake liners—look for them in the baking aisle).
Chocolate Peanut Butter Crispy Bars
These chocolate peanut butter crispy bars are like modern-day scotcheroos! This recipe is easy to make with wholesome pantry ingredients, and it’s naturally sweetened with honey instead of corn syrup. Keep in mind that these no-bake treats require 2 hours in the refrigerator to set. Recipe yields 16 small treats from one 8-inch square pan (or double the recipe to fill a 9 by 13-inch pan).
Cocktails, Coffee & Tea
Prepare cold brew coffee or cold brew iced tea a day in advance. You could also serve brunch-worthy cocktails or a mocktail:
